South Beach Diet, Phase 1 (Eek)

JW and I have started a low-carb diet in an effort to detox from the recent holiday binge. We attended two thanksgiving dinners, y'all - we felt like crap when we got back to Washington. With Christmas parties on the horizon, and no real workout plan in sight (more on this later), we decided to try the South Beach Phase 1 diet. I guess this means we're technically eating more fat and Sweet-N-Low, but hey, I'll try anything once.

Technically we started yesterday but if you haven't noticed, I kind of suck at blogging so there you go.

This was also my first attempt at taking food pictures and I have to confess that I don't have a knack for it. We barely use real plates as it is, so why bother? Paper it is.

Honestly half the time I just throw shit on a napkin and call it a day. The other half of the time I eat whatever it is still standing in the kitchen. Woooo, bad food habits!

Also there's no caffeine allowed, so I can't even wake up properly. I mean... come on.

My salad, before I mixed all the ingredients together. Then I threw tuna in and it turned real ugly. Sooo ugly. Sooo messy! Look - you can see leaves on the counter-top. Man, how do I ever keep anything clean?? Also please note this is a mixing bowl. Yep.

I've also realized that Facebook and blogs are the worst things to read on a diet. Y'all make THE most delicious sounding treats EVER. Ughhhh.

You know what else isn't on this diet? Alcohol. This wouldn't be a problem, except for the SEVEN BOTTLES of wine we have in our apartment right now. For $10, from nakedwines.com - yeeaahh. They just arrived like two days ago. Whaaat. (For comparison, we usually only have 0 bottles...)


Actually, make that 6 bottles for $10, and one that was a gift from Snowflake Lane. Can you guess which one was from Snowflake Lane? (Hint: The one with the fuzzy coat. Like.... I didn't know they made wine koozies, let alone wine koozies like that! I kind of love it and hate it at the same time.)

These snack bowls are so small I didn't think we'd ever be able to fit anything into them - but behold! Hummus and baby carrots! Edit: We just realized carrots aren't on the South Beach Diet Phase 1. This is the worst news EVER. Seriously this was my favorite "meal" of the day. Damnit!!!

I feel like if I'm the best at anything, it's making food look the most unappetizing as possible. This just looks like.. mush.

For dinner, we got super SUPER fancy. I keep reading about these cauliflower crust pizzas and cauliflower tacos, so we bought some ground beef last night and decided to try and make "tacos". I must say... they weren't the worst! JW did most of the brunt work (making the cauliflower into something edible) and he did a really great job.

You must be wondering how I'm feeling. All I can say is: constant headache. I have an inkling that this is my body screaming for sugar, and I just need to push through it... but UGH. I've never really had a headache like this before. It's in the left part of the back of my head - usually mine live right behind my eyes. Ick.

I've also lost almost 2 pounds in a day. I know most of this is water weight, so the real question is what the scale will look like tomorrow - but damn. I have a feeling I'm not eating enough. But I'm just not used to eating so much .... meat and fat. On the treadmill tonight (post tomorrow), I felt like I was sweating meat. Does that make sense?? Ugh. 

We decided we're gonna try this for two weeks, see if we feel amazing, and then keep going with Phase 2. Why two weeks, you ask? Well, because in two weeks we'll be in Dallas and The Holidays will have officially begun... hopefully I won't go into some kind of sugar shock and die at the first taste of a cupcake. Oh well, at this point it would be a great way to go.

Just kidding y'all. I'm in a weird mood. Roll with it!

  1. Those cauliflower tacos look really good! I did the SBD once, it worked, but being addicted to carbs and sugar made it so hard, the no milk part sucked!

    Good luck! At least the Christmas feasting is in sight so not long to go :)

    1. Thanks for the kind words! Actually now they've updated their website and you can have up to 2 cups of Skim Milk a day!
